The disease was pellagra. Skin peeling off in sheets, then the bowels, then madness, then death. Around 3 million cases and 100,000 dead by the time it was over. An official commission had just concluded it was spread by poor sanitation.
Joseph Goldberger was sent to find the germ. He walked round the orphanages and asylums where it raged and noticed the thing nobody had written down. The inmates got pellagra. The staff, in the same buildings, breathing the same air, never did. The staff ate meat, milk and eggs. The inmates got cornmeal and molasses.
So he fed two orphanages fresh meat and milk, and the pellagra went.
Then he ran it backwards. Eleven healthy prisoners in Mississippi were offered pardons to live on the corn diet. Within six months, six of them had it.
The profession still wanted its germ. So in 1916 Goldberger, his wife and his colleagues took the scabs, blood and excrement of pellagra patients, and swallowed and injected them. He called the sessions filth parties. Nobody caught anything.
Southern politicians called his work a slur on the region. Doctors went on hunting the microbe. Goldberger died in 1929, still being argued with, and the missing nutrient was finally identified in 1937. Meat is full of it.
A plague caused by taking the animal off the plate, investigated for a generation as anything else.
Medicine has never found it easy to believe a cure can sit on a plate, because nobody holds the patent on a plate.
